In particular, because they directly cook for large groups of tourists, mainly Kinh people and foreigners, the Thai people in Mai Chau-Hoa Binh often have to cook dishes according to the tastes of tourists. From the above practices, the Thai people in Mai Chau-Hoa Binh gradually have the skills to cook dishes of Kinh people and foreigners.

Over time, many families have developed the habit of using Kinh and foreign dishes because they often have to use leftover products to serve guests, and then it has become a family habit, when cooking for guests, it is convenient to prepare meals for the family. Therefore, in some Thai families in Mai Chau-Hoa Binh today, they can use some European dishes, dishes that foreign tourists often use, a habit that did not exist in the Thai people in Mai Chau-Hoa Binh before.

Thai families in Mai Chau-Hoa Binh who participate in tourism business and services today usually have 3 main meals, instead of the 5 traditional meals before, the mid-morning snack (for farming) and the snack before going to bed have been completely eliminated. The three meals now are two main meals - lunch, afternoon and a snack - morning. In the main meals in families, now it is not mandatory for all family members to gather as before. Especially when there are tourists, the two main meals of the family are often organized after the tourists have used the food, the host cleans up before having lunch (or dinner). The dishes of those meals often overlap with other dishes used or taken advantage of by tourists.

Thai people in Mai Chau-Hoa Binh drink more diverse because of tourism development. Accommodation service businesses all have refrigerators to store drinks for guests. They sell wine, beer, and soft drinks to serve guests and they themselves also use those drinks. Thai people in Mai Chau-Hoa Binh today

Thai people also rarely make their own wine, they often use wine sold on the market, popular refreshments. Tourists to Thai villages in Mai Chau-Hoa Binh often enjoy wine can more than all other types of wine.

A special thing in the tourism business of the Thai people in Mai Chau-Hoa Binh is that up to now, there have not been any professional restaurants serving tourists. Most of the food service for guests is done by the family that runs the accommodation business. The dishes are ordered by guests according to the agreement between the two parties and the host takes care of it himself. This is different from the service of tourists by the Thai people in some other regions - there are some Thai restaurants that specialize in serving ethnic dishes (according to the request of guests or according to the restaurant's menu). Therefore, tourists rarely have the opportunity to enjoy the ethnic dishes of the Thai people in Mai Chau-Hoa Binh. If they do enjoy them, they are not rich, not comprehensive in quality, taste, and appearance. Moreover, according to the general trend today, the source of food from nature in Mai Chau-Hoa Binh is increasingly scarce, so traditional ethnic dishes are becoming less and less monotonous than before.

However, there are quite a few tourists (especially domestic tourists) coming to Mai Chau-Hoa Binh who like to eat ethnic dishes. This need has helped the Thai people of Lac village and Pom Coong village to have the conditions to preserve traditional ethnic dishes of the past. The ingredients to prepare some ethnic dishes are increasingly scarce, they have to try to buy them from other places to bring back and prepare to serve tourists.

Coming to Lac village and Pom Coong village at night is like coming to a small town. All the houses have many lights on, tourists and villagers sit and chat, eat and drink upstairs and on the floor. At the same time, many houses in the village resound with singing, gongs and drums of the village's art troupes serving tourists.

2.3.4. Impact on family and social relationships

In general, although tourism in Mai Chau-Hoa Binh is quite developed, the relationships between parents-children, husband-wife, siblings, landlord-guest, and neighbors in the village are less affected by the business rules and market economy rules inherent in business, especially tourism business.

Analyzing the data in table 2.6 shows :

+ The majority of 99/120 families (82.5%) have three generations (grandparents, children, grandchildren) living together in the same house, including villages with strong tourism development and villages with undeveloped tourism. Families with two generations (parents, children) as well as four generations are very rare (two generations - 13/120 families, 10.8%; four generations - 8/120 families, 6.7%). This proves that tourism business has little impact on the tradition of the Thai people in these villages - that is, people often live together for many generations (usually 3 generations) under the same roof.

+ The number of siblings who are married and living with their parents is quite large, 107/120 families (89.2%), while the number of families living separately (husband, wife and children) is very small - 13/120 families (10.8%). The number of families with 1-2 siblings who are married and living with their parents is the majority - 102/120 families (85.0%), the number of families with 3-4 siblings who are married and living with their parents is now very small - 5/120 families (4.2%).
