Part 1 INTRODUCTION
1.1. Urgency of the topic
Reality has proven that in recent years, Vietnam tourism has grown rapidly, gradually improving its image and position in the regional and international tourism market, while affirming its role and position in the national economy. In the first 8 months of 2019, the tourism industry attracted more than 11 million international visitors to Vietnam, more than 80 million domestic visitors, total tourism revenue reached 442,200 billion VND (According to statistics of the General Department of Tourism, 2019). Tourism activities have actively contributed to the cause of industrialization and modernization of the country and the process of international economic integration, implementing the foreign policy of multilateralization and diversification of the Party and State.
Nowadays, tourism has become popular and is no longer strange to people. If in the past, tourism was a high-class need, today, with the impact of urbanization and the scientific and technological revolution, tourism has gradually become a necessary need for everyone. Tourism is a means to help restore health, increase labor capacity, and at the same time improve the physical and spiritual life of people. Nowadays, many countries in the world consider tourism an important economic sector in the country's economic development strategy.
In the process of integration and development, the Party and the State have determined: Developing tourism to truly become a spearhead industry, improving the quality and efficiency of operations on the basis of exploiting advantages in natural conditions, ecology, tradition, culture, and history. Meeting the needs of domestic tourism and rapidly developing international tourism to soon reach the level of tourism development of the region.
areas, build and upgrade infrastructure, form key tourist areas, promote cooperation and association with other countries.
Tourism development cannot be separated from the development of the hotel system. Hotels are a necessary condition, a bridge between tourism supply and demand - hotels are a bridge to meet the diverse needs of tourists in both quality and quantity, of which the most typical are accommodation services and food services. Every day, hotel managers constantly research and innovate methods between product policies, service methods... to make food services an important factor in attracting guests. However, to make food services in hotels an important and effective factor in attracting guests raises many extremely diverse and complex issues that need to be solved such as: organizing and using the workforce, managing service quality, product types and specific products, building technical facilities for processing and serving, advertising, marketing and pricing, customer markets, etc.
From practice and seeing the importance of proposing measures to improve the efficiency of food service business, as a graduate intern, with the consent of the Board of Directors, the Board of Directors of the Faculty of Resource Management - Thai Nguyen University of Agriculture and Forestry, I carried out the topic: " Current situation and solutions to improve the efficiency of food service business at the Restaurant of Song Hong Thu Do Joint Stock Company in Vinh Yen city, Vinh Phuc province"

DOCUMENT OVERVIEW
2.1. General theoretical basis for hotel business efficiency and food service business efficiency in hotels.
2.1.1. General concept of hotel.
A hotel is a solid architectural structure with many floors and many bedrooms equipped with specialized equipment, facilities and furniture for the purpose of providing accommodation services, food and beverage services and other additional services (Nguyen Van Manh, Hoang Thi Lan Huong, 2004)
According to Vietnam's hotel classification and ranking standards TCVN 43912009 issued in 2009, a hotel is a tourist accommodation establishment with a scale of 10 bedrooms or more, ensuring quality in terms of facilities, equipment and necessary services to serve guests.
2.1.2. Types of hotels.
Commercial hotel
This is a popular type of hotel worldwide for business travelers or short-term tourists.
Resort hotel
This type of hotel is often built near areas with natural resources such as mountains, forests, lakes, etc. Guests coming to resort hotels are mainly groups of guests with the purpose of resting and relaxing.
Budget hotel (Hostel)
These are small hotels with basic facilities, usually for backpackers or people who need to stay overnight. They are often located at train stations, bus stations, markets, etc.
Motel
This is a type of service that provides overnight accommodation on the roadside.
for customers traveling by car, motorbike… to stop overnight. This type of accommodation has started to appear in our country in the past few years.
Floating hotel
With boats that are not inferior to a hotel on land and in addition to accommodation and food services, there are also entertainment and beauty services. Floating hotels are often not fixed in one place but they move from one region to another or travel between countries. In Vietnam, we can see this type of hotel in the Ha Long Bay area or coastal cities on a smaller scale.
Apartment hotel (Codotel/ Residences/ Serviced Apartment)
It is an apartment with full functional rooms: bathroom, kitchen, living room... but is rented out and operated as a hotel. The customers who prefer this type are groups of friends, families or guests with long-term stays (Nguyen Van Manh, Hoang Thi Lan Huong, 2004)

2.2. Functions, characteristics and procedures for organizing food and beverage business activities in restaurants.
The main function of a hotel restaurant is to sell food and drinks and serve the dining needs of hotel guests. This is an indispensable activity in the hotel business, ensuring optimal satisfaction of the urgent needs of today's tourists, which is not only "full meals - warm clothes" but also "delicious food - beautiful clothes".
In addition, some restaurants are also responsible for catering for hotel staff and provide additional services such as: organizing parties, buffets for conferences, organizing parties according to customer requests, etc.
Thus, the restaurant has specific characteristics, roles and functions in the hotel, and is an important and indispensable part of the hotel business. Investing in developing the restaurant business in the hotel is also investing in development, bringing high revenue to the hotel. (Do Thien Dung, editor of the Restaurant Business Management Course)
2.2.1. Functions of restaurant business.
a) Production function.
Restaurants produce food and drinks to serve customers' needs and tastes.
b) Product circulation and sales function.
Products in the restaurant are of two types: self-produced and non-self-produced.
Self-produced are dishes and drinks prepared in the restaurant according to a certain process.
Not self-produced are products brought in from outside such as:
Beer, wine, soft drinks,…
c) Service organization function.
Restaurants help customers consume their food, drinks, and products.
The above three functions are always unified and interdependent. If one of the three functions is missing, the unity in the restaurant's service provision process will be broken. ( Do Thien Dung, 2011)
2.2.2. Business characteristics of hotel restaurants.
The hotel restaurant is a business department that serves the dining needs of the hotel, mainly serving: tourists, conference attendees, guests staying at the hotel, wedding parties, birthdays, parties, etc.
The restaurant's business products include 2 types:
Homemade products: processed by the restaurant itself
Goods for sale: alcohol, mineral water, candy, etc.
The hotel restaurant serves guests from 6am to midnight every day, some places serve 24/7.
The revenue of the hotel restaurant depends on the dining needs of the customers and each meal, so the revenue is not uniform but has
